Taro tapioca coconut dessert

Ingredients

tapioca pearls - 1 cup
water
Taro root - 2 cups, peeled and 1cm cubes
Coconut milk - 1 can
Rock sugar - 0.66 cup

Method

Boil 4 cups of water, add tapioca pearls. Simmer for about 7 minutes.

Cover then pan and stand for 10 to 15 minutes. Pearls should become transparent. Drain and set aside.

Boil 6 cups of water. Stir in taro root. Simmer for about 10 minutes until soft.

Add coconut milk, rock sugar. Simmer for 20 minutes.

Mix in pearls. Serve hot, room temperature or chilled.
