warm water + yeast + sugar in bowl and mix set to one side |

flour + salt + olive oil + yeast mixture |

knead in bowl |

knead for 10 minutes of bench should be springy when ready |

fold into ball flip over spin |

oil a bowl and dough cover with cling film |

|
rest for 1 hour or even better overnight |
